Quick and Crunchy Chocolate Chip Biscuits

These are unbelievingly quick and easy and so very tasty. What’s more, they break with such a wonderfully resounding “SNAP” that it’s virtually impossible to eat them silently. Go on, give it a try.

Makes: 30 – 32 medium biscuits

Time: Very quick

Level: Easy Peasy

Oven: 190°C / Fan 170°C / 375°F / Gas 5

Ingredients

  • 100g/3½oz softened butter or spreadable from a tub 
  • 100g/3½oz Soft brown sugar
  • 60g/2oz Caster sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 200g/7oz plain flour
  • pinch of salt
  • ½ tsp bi-carb soda
  • ½ tsp baking powder
  • 100g/3½oz choc chips

Method

1. Oven on. Line two baking trays.

2. Beat butter and sugars together well. Add egg and vanilla extract and beat.

3. Mix in flour, salt, bi-carb, & baking powder.  Stir in chocolate chips.

4. Roll into teaspoon sized balls and place on trays (about 10 per tray. They don’t spread too much.)  Flatten them a little.

5. Bake for 6 – 7 minutes then change trays round and give them 5 – 7 minutes more.

Idea – try using half white flour and half wholemeal
