Malteser Brownies

When I made a Malted Chocolate Bundt Cake recently, I had lots of Maltesers left over, so this was the obvious way to make good use of them. And the result is certainly very good – rich, tasty and squidgy. (Sounds a bit like three cartoon characters, but very edible ones.)

Makes: From 12 to 24, depending how big you want them

Level: Easy

Time: About 30 minutes preparation, another 30 for baking + cooling time, then 10 minutes to turn out and cut.

Need: A 30cm x 20cm tin

Ingredients

  • 200g/7oz butter
  • 250g/9oz dark chocolate
  • 3 eggs
  • 150g/5½oz light brown sugar
  • 1 tsp vanilla extract
  • 100g/3½oz plain flour
  • Pinch of fine salt
  • 45g/1½oz Horlicks powder or similar
  • 150g/5½oz crumbled Maltesers 

Method

1. Line the tin with baking parchment, leaving two opposite sides high enough to lift out the baked brownie block (unless you intend cutting them in the tin.) Turn oven to 180°C / 160°C fan / 325°F / gas 4.

2. Melt the butter and chocolate in a bain marie. When melted, take off the heat and leave to cool for a few minutes.

3. Beat eggs, sugar and vanilla in a separate large bowl until double in size, pale and fluffy.

4. Add the melted chocolate and butter and stir in. Sieve the flour, salt and Horlicks powder on top then fold it all together. Stir in half of the crumbled Maltesers.

5. Pour into prepared tin and gently tap it on the work top to remove any trapped air. Sprinkle over the remaining crumbled Maltesers.

6. Bake for about 20 – 25 minutes, until risen at edges but still squidgy in the middle. Leave in the tin for 10 – 15 minutes then turn out and cut into pieces – or cut in the tin if you prefer. (I find that a slightly wet serrated knife cuts them cleanly.)

N.B. For an alternative finish, reduce the amount of crumbled Maltesers in the mixture to just 75g/2½oz. (Keep the rest whole.) Cut the slab into pieces and brush the tops with melted chocolate then add one or two Maltesers (different colours if possible) onto each piece.
