This is one of those wonderfully easy bakes that may look unremarkable, but once you’ve made it you’ll happily go back to it time and time again. What’s more, it’s so adaptable it never need be exactly the same each time – a tasty and varied family favourite.

Makes: 16 squares
Time: About an hour, maybe less + cooling
Level: Very easy
Need: A 20cm/8” square tin
Ingredients
- A 500g/18oz mixture from the following four dry ingredients:
- 50g/1¾oz – 150g/5½oz oats*
- 50g/1¾oz – 150g/5½oz Polenta*
- 50g/1¾oz – 150g/5½oz ground almonds*
- 50g/1¾oz – 150g/5½oz oatmeal* or oat bran
- 200g/7oz sugar
- pinch of salt
- 200g/7oz butter
- 75g/2½oz golden syrup
- 150g/5½oz chocolate chips (or more, if you want)
* For those pictured here, my choice was 100g/3½oz oats, 150g/5½oz polenta (I really like the texture), 100g/3½oz ground almonds & 150g/5½oz oatmeal.
Method
1. Turn the oven on to 180°C / Fan 160°C / 350°F / Gas 4. Grease and line the tin with baking parchment.
2. In a large bowl, mix together your selection of oats, polenta, ground almonds and oatmeal or bran then add the sugar and salt.
3. In a saucepan melt together the butter and golden syrup. Then stir into the dry ingredients. Stir in the chocolate chips. Make sure everything is well mixed and coated in butter.
4. Spoon into the tin, press it all down very firmly and bake for 35 – 45 minutes. It will be baked when the edges are beginning to brown a little and may be pulling away from the side of the tin. It will still be quite soft until it cools.
5. Allow it to cool for 5 – 10 minutes then cut part way through into 16 squares. Leave to cool fully before completing the cutting and turning out.
